Ingredients
1 cup plain whole-milk yogurt
1/2 cup granulated sugar
1/4 cup fresh peach puree (see note)
1/4 cup water
Fresh peaches, sliced (about 2-3 slices per pop)
Ice pop molds or popsicle sticks
Directions
-
In a medium-sized bowl, whisk together the yogurt, sugar, and peach puree until well combined.
-
Add the water and whisk until smooth.
-
Taste and adjust the sweetness or peach flavor to your liking.
-
Cut the fresh peach slices into thin wedges.
-
Pour the yogurt mixture into ice pop molds, leaving about 1/4 inch of space at the top.
-
Insert a popsicle stick or ice pop mold into each mold.
-
Place the sliced peaches onto the surface of the yogurt mixture, slightly overlapping each other.
-
Cover the molds with plastic wrap or aluminum foil and insert them into the freezer.
-
Freeze for at least 4 hours or overnight.
-
Once frozen, remove from the freezer and run the popsicles under cold running water for a few seconds to loosen them from the molds.
-
Note: To make fresh peach puree, blend 2-3 ripe peaches in a blender or food processor until smooth. Strain the mixture through a fine-mesh sieve to remove the pulp and any seeds.
