Glazed Chicken Meatballs

Glazed Chicken Meatballs

Ingredients

  • 1 pound ground chicken

  • 1/2 cup breadcrumbs

  • 1/4 cup minced onion

  • 1 egg

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon garlic powder

  • 1/4 cup honey

  • 1/4 cup soy sauce

  • 1/4 cup ketchup

  • 2 tablespoons rice vinegar

  • 1 tablespoon grated ginger

  • 2 garlic cloves, minced

  • 2 tablespoons cornstarch

  • 2 tablespoons water

  • 2 green onions, thinly sliced

  • salt and black pepper, to taste

Optional Ingredients

  • 1/2 teaspoon chili flakes

Directions

  1. Preheat your oven to 375°F. Grease a baking sheet with non-stick spray or line it with parchment paper. 
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, minced onion, egg, dried oregano, garlic powder, salt, and black pepper. Mix until all ingredients are evenly distributed. 
  3. Roll the mixture into 1-inch meatballs and place them onto the prepared baking sheet. 
  4. In a small mixing bowl, whisk together the honey, soy sauce, ketchup, rice vinegar, grated ginger, minced garlic, and chili flakes (if using).
  5. Pour the sauce over the meatballs, and use a spoon to coat them evenly. 
  6. Bake for about 19 to 20 minutes, or until the meatballs are cooked through and the sauce is bubbling. 
  7. In a small bowl, mix together the cornstarch and water to create a slurry. 
  8. Remove the meatballs from the oven and pour the sauce into a small saucepan over medium heat. Add the cornstarch slurry to the saucepan and whisk until it thickens to your desired consistency.
