Ingredients
1 pound ground chicken
1/2 cup breadcrumbs
1/4 cup minced onion
1 egg
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup honey
1/4 cup soy sauce
1/4 cup ketchup
2 tablespoons rice vinegar
1 tablespoon grated ginger
2 garlic cloves, minced
2 tablespoons cornstarch
2 tablespoons water
2 green onions, thinly sliced
salt and black pepper, to taste
Optional Ingredients
1/2 teaspoon chili flakes
Directions

Preheat your oven to 375°F. Grease a baking sheet with non-stick spray or line it with parchment paper.

In a large mixing bowl, combine the ground chicken, breadcrumbs, minced onion, egg, dried oregano, garlic powder, salt, and black pepper. Mix until all ingredients are evenly distributed.

Roll the mixture into 1-inch meatballs and place them onto the prepared baking sheet.

In a small mixing bowl, whisk together the honey, soy sauce, ketchup, rice vinegar, grated ginger, minced garlic, and chili flakes (if using).

Pour the sauce over the meatballs, and use a spoon to coat them evenly.

Bake for about 19 to 20 minutes, or until the meatballs are cooked through and the sauce is bubbling.

In a small bowl, mix together the cornstarch and water to create a slurry.

Remove the meatballs from the oven and pour the sauce into a small saucepan over medium heat. Add the cornstarch slurry to the saucepan and whisk until it thickens to your desired consistency.
