
Bright, fresh, and full of seasonal flavor—this salad showcases the best of winter produce. Hearty greens, juicy citrus, and crunchy walnuts come together with a zesty lemon-honey dressing for a crisp, refreshing bite that’s sure to brighten your table.
Ingredients
1 bundle kale
1 bundle rainbow chard
Blood orange
1/2 grapefruit
A couple handfuls of walnuts, for garnish
Dressing
2 1/2 tablespoons EVOO
Juice of half a lemon
1 tablespoon honey
Pinch of salt
Pepper, to taste
Directions

Remove ribs from greens. Roll up greens and chop small.

Peel citrus, prepare wedges, slice as you’d like.

Put greens and citrus (set aside a few slices for garnish) in a large bowl.

Whisk together dressing in a small bowl: EVOO, lemon juice, honey, salt, and pepper.

Chop a couple handfuls of walnuts and add to the large bowl (reserve some for garnish).

Add dressing to taste, mix and serve.

Note: we like to layer the salad with some extra slices of citrus, sprinkle of walnuts, and drizzle of the dressing on top.
