2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup unsalted butter, cold and cut into small cubes
1 cup cheddar cheese, shredded
1/4 cup scallions (green onions), chopped
3/4 cup buttermilk

Preheat the oven to 425°F and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

Stir in the shredded cheddar cheese and chopped scallions until they are evenly distributed.

Pour in the buttermilk and stir with a wooden spoon or spatula until the dough starts to come together.

Transfer the dough onto a lightly floured surface and gently knead it a few times until it forms a cohesive ball. Be careful not to overwork the dough.

Roll out the dough to about 1-inch thickness. Use a round biscuit cutter (about 2.5 inches in diameter) to cut out biscuits. Place the biscuits onto the prepared baking sheet, leaving a little space in between.

Gather any remaining dough scraps, re-roll, and cut out more biscuits until all the dough is used.

Bake the biscuits in the preheated oven for about 12 to 15 minutes, or until they are golden brown on top and cooked through.
