Ingredients
2 ripe bananas, mashed
1/3 cup butter, melted
1/2 cup granulated sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/2 cup chocolate chips
Directions

Preheat the oven to 375°F. Grease a muffin tin or line with muffin cups.

In a large mixing bowl, mash the bananas until smooth.

Add the melted butter and granulated sugar and stir until well combined.

Stir in the beaten egg and vanilla extract.

Add the baking soda and salt to the bowl and mix it in.

Add the flour to the mixture and mix until it is just combined. Avoid overmixing.

Fold in the chocolate chips.

Using an ice cream scoop or a spoon, fill each muffin cup 2/3 of the way full with the batter.

Bake for 20 to 25 minutes, or until the muffins are golden brown and a toothpick that's inserted the center comes out clean.

Remove the muffin tin from the oven and let it cool for a few minutes before transferring the muffins to a wire rack to cool completely.

Serve the muffins warm or at room temperature.

Note: For an extra special touch, sprinkle additional chocolate chips or chopped nuts on top of the muffins before baking. Alternately, you could add a streusel topping made of flour, sugar and butter before baking for a crunch finish.
