Ingredients
1 boneless turkey breast, 2 to 3 lbs
8 slices of bacon
2 olive oil
1 tablespoon dried thyme
1 tablespoon dried rosemary
1 tablespoon garlic powder
Salt and pepper, to taste
Directions

Preheat oven to 350°F.

Rinse the turkey breast under cold water and pat it thoroughly dry with paper towels.

In a small bowl, mix the olive oil, dried thyme, dried rosemary, garlic powder, salt, and pepper

Rub the spice mixture all over the turkey breast, making sure it is easily coated.

Lay the bacon slices side by side on a cutting board, slightly overlapping each other to create a flat layer of bacon.

Place the turkey breast on top of the bacon slices, with the skin side up.

Wrap the bacon slices around the turkey breast, tucking the ends underneath the breast.

Transfer the bacon-wrapped turkey breast to a roasting pan, with the bacon seem side down.

Roast the turkey breast for 1 to 1.5 hours, or until a meat thermometer inserted into the thickest part of the breast reads 165°F.

Remove the pan from the oven and let the turkey breast rest for 10 to 15 minutes before slicing.

Slice the turkey breast crosswise into thin slices and serve.
