Pitaya Smoothie Jars

Packed with the bright hues of dragon fruit, this smoothie is not only visually stunning but also rich in vitamins and antioxidants.

Ingredients

  • 1 cup dragon fruit (fresh); or 1 packet frozen (unsweetened)

  • 3 cups pineapple juice

  • 1 cup raw cashews

  • 3/4 cup chia seeds

Toppings

  • Granola

  • Strawberry

  • Blueberry

  • Mango

  • Goji Berry

  • Shredded Coconut

  • Honey

Directions

  1. Add pitaya, raw cashew and pineapple juice to high speed blender. If you don’t have a high speed blender, soak cashews in hot water for 10-15 minutes to soften, strain, then blend.
  2. Pour pitaya mix into bowl and whisk in chia seeds. Let set for 30 minutes.
  3. To Assemble: Layer pitaya chia pudding with your favorite toppings and enjoy!

    *This will keep in the fridge for 3 days.
