Ingredients
1 pound large shrimp, peeled and deveined
4 tablespoons butter, melted
4 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup mozzarella cheese, shredded
2 tablespoons chopped fresh parsley
Lemon wedges, for serving
Optional Ingredients
1/4 teaspoon red pepper flakes
Directions
-
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
-
In a small bowl, combine the melted butter, minced garlic, red pepper flakes (if desired), salt, and black pepper. Stir well to combine.
-
Using a sharp paring knife, butterfly the shrimp by making a shallow cut along the back of each shrimp, taking care not to cut it in half completely. Spread the shrimp open slightly to create a pocket for the filling.
-
Brush the garlic butter mixture over the butterflied shrimp, making sure to fully coat each shrimp.
-
Place the butterflied shrimp on the prepared baking sheet, laying them flat. Sprinkle the shredded mozzarella cheese evenly over the top of each shrimp.
-
Bake in the preheated oven for about 8 to 10 minutes, or until the shrimp are cooked through and the cheese is melted and golden brown.
-
Remove the shrimp from the oven and sprinkle with chopped fresh parsley.
-
Serve the Cheesy Butterflied Garlic Shrimp as an appetizer, garnished with lemon wedges for squeezing over the shrimp.
