Ingredients
3 cups butternut squash chopped
4 ounce log of goat cheese
1/2 cup extra virgin olive oil, plus 2 tablespoons
3 cloves garlic
2 sprigs fresh sage or 2 teaspoons dried sage
10 ounces pasta of choice
Kosher Salt & black pepper to taste
Directions

Preheat the oven to 400°F.

In a large baking dish, add chopped butternut squash and garlic. Drizzle with 1/2 cup olive oil, add sage, and season with salt and pepper. Bake for 30 minutes or until butternut squash is soft.

After 30 minutes, remove from the oven and stir. Add the log of goat cheese directly into the middle of the roasting pan and drizzle with remaining olive oil.

Bake for another 10-15 minutes, until the goat cheese is soft and golden brown.

While baking, cook pasta according to package instructions. Drain water, retaining about 1/2 cup of pasta water.

Add pasta to dish, stirring well. Add retained pasta water as needed in order to create a creamy sauce.
