Broiled Salmon with Tangerine Salsa

Broiled Salmon with Tangerine Salsa

Born and crossbred by UC Riverside citrus scientists, Gold Nuggets might be the world’s tastiest tangerines. With a slightly bumpy rind, these treasures are easy-to-peel, rich, and sweet. These California gems are exceptionally juicy, averaging a 50% juice content, and they are seedless! These tangerines are truly a sweet experience from start to finish.

Averaging between a 15%-17.5% Brix, a scale used to measure the sweetness of fruits, the experts agree: Gold Nugget Tangerines are considered by professional taste panels to be one of the best-flavored citruses in the world!

Gold Nugget tangerines are great for on-the-go snacking, but why stop there? Try one of our go-to recipes, starting with this luscious salmon.

Ingredients

  • 2 pounds salmon fillets

  • 3/4 cup Gold Nugget Tangerines (cut into cubes)

  • 1 medium tomato diced

  • 3 tablespoons cilantro finely chopped

  • 3 tablespoons red onion finely chopped

  • 3 cloves garlic minced

  • 2 tablespoons tangerine zest

  • 3 tablespoons extra virgin olive oil

  • 2 teaspoons salt, more

  • 2 teaspoons pepper, more

Optional Ingredients

  • 1 tablespoon jalapeño finely chopped

Directions

  1. Preheat broiler to 450-500°F.
  2. In a small bowl, combine tangerine zest, minced garlic, salt, pepper, and olive oil.
  3. Place salmon on a lined baking sheet. Using a brush, apply the oil mixture to the fish. Place into the broiler for 10-15 minutes, or until opaque.
  4. While the salmon broils, combine Gold Nugget tangerine cubes, tomato, red onion, jalapeño, and cilantro in a bowl to create your tangerine salsa. Season with salt and pepper to taste.
  5. Remove fillets from broiler, top them with tangerine salsa, and serve.
