Summer Heirloom
Tomato Salad

This stellar summer recipe
is simple yet yields tons of
flavor. It features our
exquisite summer heirlooms
and a simple vinaigrette. A
perfect side for grilled steak.
Ingredients:
2 lbs heirloom tomatoes,
cored and quartered
1 tablespoon minced garlic
1/4 cup champagne vinegar
1/2 cup extra virgin olive oil
2 tablespoons minced
Italian parsley
1 tablespoon minced fresh Basil
1 tablespoon minced
green onions
1/2 teaspoon sugar
1/2 tablespoon kosher or sea salt
1 teaspoon black pepper
Method:
In a bowl, mix together garlic
and champagne vinegar. Slowly
add olive oil, mixing with wire
whisk to emulsify. Add parsley,
basil, green onion, sugar, salt
and pepper. Adjust seasonings
if necessary. Add quartered
tomatoes and toss to mix.
