Green Beans with Pancetta and
Caramelized Onions
serves 4-6
Pancetta is a highly flavorful Italian-style bacon that's cured with salt but unsmoked like American bacon. You can find it in our Deli department.
Ingredients:
1 package (16 oz) Bristol Farms trimmed green beans
1 tablespoon Kosher salt
4 oz pancetta, diced into 1/2 inch pieces
1 Vidalia, Maui or sweet onion, minced
1/4 cup balsamic vinegar
3 tablespoons chopped Italian parsley
1 tablespoon black pepper
Method:
1. Bring 3 quarts of water to a boil in a large sauce pan add beans and salt. Cook until beans are tender, about 3-5 minutes and place in ice water bath to stop the cooking process.
2. Fry pancetta over medium heat in a large skillet until browned and remove pancetta from
skillet with a slotted spoon and drain. Remove all but 3 tablespoons of the fat and add onion to the skillet; sauté until golden, about 5 minutes.
3. Add balsamic vinegar and green beans to the saute pan and heat for about 2 minutes.
4. Add pancetta and black pepper to saute pan and heat through, place vegetable in a nice
serving dish and sprinkle with Italian parsley.
