Using the freshest and ripest peaches takes this salsa to a whole new level.
It's the perfect blend of sweet and savory.
Try using this salsa on a quesadilla made with Brie - it's out of this world!

Fresh Peach Salsa

Ingredients
2 ripe but firm medium Oh Henry peaches
1 tablespoon vegetable oil
1 tablespoon fresh lime juice
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/4 cup finely chopped red onion
1 tablespoon chopped cilantro
1 teaspoon (or to taste) minced jalapeno pepper
1/2 teaspoon salt
fresh ground pepper to taste

Method
Wash the peaches. Do not peel, but cut each in half and remove the pits; cut into 1/2-inch cubes.

Mix together the oil and lime juice in a mixing bowl. Add all remaining ingredients, and toss to mix well. Allow to stand five minutes or so, then taste for seasoning (you may like more lime juice, jalapeno, salt, etc.)

Salsa will keep one day in refrigerator before beginning to lose texture and may be kept longer, still having good flavor.
