With our own Bristol quality halibut on sale this week I've put together this recipe that's full of flavor and remarkably easy to prepare. Who says a delicious dinner requires tons of time in the kitchen?

Grilled Fajita Halibut

fish ingredients
1 lb halibut filet, cut into 2 pieces
2 tablespoons extra virgin olive oil
2 tablespoons Lawry's fajita spice sea
salt and fresh ground black pepper, to taste

fish method
Preheat BBQ, brush fish with olive oil and then season with fajita spice, salt and pepper. Cook approximately 3-4 minutes per side or until cooked through.

vegetable ingredients
2 tablespoons extra virgin olive oil
1/4 medium onion, cut into a thin julienne
1/4 yellow bell pepper, cut into a thin julienne
1/4 green bell pepper, cut into a thin julienne
1 vine cluster tomato, seeded and diced into 1/2 inch dice
1/2 avocado, cut into 1/2 inch dice
2 tablespoons diced green onion
2 tablespoons minced cilantro
1 tablespoon Lawry's fajita spice
sea salt or fresh ground black pepper, to taste

vegetable method
Heat oil in saute pan, add onions and bell peppers, season with fajita spice, salt and pepper.saute until tender then add tomatoes and cook for an additional minute. Gently fold in avocados, cilantro and green onions. Adjust seasonings.

to serve
Place vegetables on center of plate, top with cooked halibut filet and lightly drizzle with extra virgin olive oil.
