This week's recipe comes from Achille Dattilo
and Dattilo's Restaurant. It's a delciously simple recipe featuring their Sicilian sauce.
Chicken Cacciatore
Ingredients
8 boneless chicken thighs (breasts or legs may also be used)
1/4 cup Basil-Infused Olive Oil
24 oz Dattilo Sicilian Sauce
1 cup flour
1 teaspoon salt
1 teaspoon white pepper
Method
In bowl combine flour, salt and white pepper and coat the chicken thighs. Discard the remaining flour
mixture. In a hot skillet, brown the chicken thighs on both sides with basil-infused olive oil. You'll want to brown
the thighs until they are golden brown on both sides. Set them aside. In a baking pan, arrange chicken side by side,
pour Dattilo Sicilian Sauce over the chicken, cover with aluminum foil and bake for 450 degrees for 45 minutes or
until done.
