A very simple dish that is great for a first course or served on mixed baby greens as a salad. This is a wonderful way to showcase these limited seasonal beauties.

Heirloom Tomato Towers

Ingredients
2-3 Heirloom tomatoes, sliced 1/4 inch thick
1 package fresh mozzarella, sliced 1/4 inch thick
2 tablespoons Natura Cucina olive oil
1-2 tablespoons Fini Balsamic Vinegar
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
3 tablespoons fresh basil, chopped

Method
1. Place 4 tomato slices on plate or platter and top each with a slice of mozzarella cheese. Follow this process 2 more times, until you have 3 layers of tomatoes and 3 layers of cheese.
2. Drizzle each tower with olive and balsamic vinegar. You can adjust oil and vinegar according to your taste.
3. Sprinkle each tower with salt, pepper and fresh basil.
