Bristol Farms BBQ Plank Beef

INGREDIENTS
1 Bristol Farms Cedar or Hickory Plank
2 lbs Santa Barbara top sirloin or tri-tip or bacon-wrapped bordelaise filet from our Meat Department
2 tablespoons extra virgin olive oil
1 tablespoon sea salt or Kosher salt
1/2 tablespoon fresh ground black pepper

M E T H O D
1. Soak plank in water for 3 hours.
2. Remove plank from water and wipe dry.
3. Wipe smooth side of plank with olive oil.
4. Season both sides of meat with salt and pepper and place on smooth side of plank.
5. Place plank with meat directly on BBQ grill and place lid down on BBQ and adjust temperature of BBQ to low-medium. The BBQ should not go above 350-400 degrees.
6. Cook meat for 20 minutes, lift lid and flip meat over, cover and cook for an additional 15-25 minutes.
7. Check temperature of meat with pocket thermometer. For medium rare, temperature should be 130 degrees. Adjust time if you prefer well done.
8. Remove plank from grill and place on a large platter. Cover with foil and let rest 5 minutes before slicing.
** Please note that cooking times will vary due to thickeness of meat and temperature of your grill.
