Homemade Pumpkin Pie

Ingredients
1 medium Sugar Pie pumpkin
(approximately 3 lbs)
1 tablespoon vegetable oil
1 each frozen ready-made pie crust (9 inch)
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
4 eggs, lightly beaten
1 cup honey, slightly warmed
1/2 cup milk
1/2 cup heavy whipping cream

Method
1. Cut pumpkins in half and remove seeds. Lightly oil the cut surface. Place cut side down on a sheet pan lined with foil (spray with no-stick spray). Bake at 325 degrees oven until the flesh is tender when poked with a fork. Cool until just warm. Scrape the pumpkin flesh from the peel. Puree flesh in blender or food processor.
2. In a large bowl, blend together 2 cups pumpkin puree, spices and salt. Beat in eggs, honey, milk and cream. Pour filling into pie shell.
3. Bake in 400 degree F oven for 35 minutes (uncovered), and remove from oven. Spray a piece of foil large enough to cover the pie with no stick spray and carefully cover the pie and bake for another 25-35 minutes or until a toothpick inserted into the pie comes out clean.
4. Let pie rest for 30 minutes before slicing.
