Bruce's End Zone Ribs
Serves 6
Ingredients
4 each Bristol Farms All Natural Pork Ribs
1 gallon Water
4 tablespoons Beef Base (Better than bouillon brand)
1 cup Tomato Paste
1/2 cup Honey
1/2 cup Red Wine Vinegar
2 tablespoons Ground Cumin
1/2 cup Paprika
2 tablespoons Garlic Cloves, Mashed
2 tablespoons Fresh Ginger, Peeled and Mashed
1 tablespoon Cayenne Pepper
1 tablespoon Sea Salt or Kosher
4 cups BBQ Sauce (Gayles Sassy or Favorite brand)
1/2 cup Green Onions (optional)
Prepping Ribs:
This step is recommended to make the ribs more tender, but it's not required. Place ribs, bone side up, on work
table. Using a small paring knife and starting at one corner of the ribs, trim off the membrane sheath from the back
of each rack. You should be able to pull this membrane off in one piece.
Method:
1. Combine water, beef base, tomato paste, honey, red wine vinegar, cumin, paprika, garlic, ginger, cayenne and
salt. Bring to boil and use a wire whip to mix. Add ribs, reduce heat to simmer and cook until meat is tender but
not falling off the bone; approximately 1.5 hours.
2. Preheat oven to 400 degrees. Remove ribs from water and place on a sheet pan, or large roasting
pan bone side down, coat with BBQ sauce and cook 15-20 minutes. 3. Cut ribs into quarters and serve family style on
a large platter and sprinkle with green onions.
