A fine meat is often the focus of your meal. And whether you barbecue, broil, bake or skew­er, there are two considerations that go into every main course: the quality of the food you start with and the way it is prepared. We don’t believe in settling on either account.

It’s no surprise that Bristol Farms supplies only top grade meats. Inside our Dry-Aged Beef Locker you’ll find tender, flavorful USDA Choice Natural Beef. Dry Aged Beef is a time-honored, respected and high-quality technique that’s used to create cuts of beef with outstanding flavor and texture. Unwrapped cuts of USDA Prime beef are placed in a specially constructed, very cold storage locker for up to thirty days. At Bristol Farms, we place cuts of beef in our refrigerated locker for 21 to 30 days at a temperature of 32 to 34 degrees Fahrenheit, 80-85% relative humidity, and an air velocity of 0.5-2.5 meters a second. Sounds a bit picky, but these conditions are crucial to the proper aging of the beef. Over the duration of the Dry Aging process, the beef will have lost approximately 20% of its original weight, but gained incomparable flavor and texture.

Our meats are ground daily to ensure freshness and our pork, lamb, beef, and veal sausages are made from lean, fresh, hand-trimmed cuts.quality meat We use pork or lamb casings and hand cut for superior quality. Our free range, air-chilled chicken have an all vegetarian diet, no antibiotics or growth stimulants and no added water.
